FRANCIACORTA EXTRA BRUT D.O.C.G.

PRODUCTION WINE

This wine is produced from our vineyards in the district of Paderno Franciacorta and Rodengo Saiano in one of the most reputed regions in Italy for the productions of sparking wines.

VARIETAL AND VINIFICATION
Franciacorta Brut D.O.C.G. "non dosato" stems from Chardonnay, Pinot bianco and Pinot nero grapes in donai selection. The grapes are picked and transferred to the winery into small boxes, soft pressing of the grapes, fermentation takes piace at a controlled temperature of 17-19° with the addition of indigenous yeast in order to maintain the typical aromas and bouquets of Franciacorta.
During the month of March and April the wine is bottled and the process to induce the sparkling accours. The bottles are laid in coll, dark cellars for at least 25 months. After this period the sparkling wine has acquired its definitive taste and bouquet and it is ready for the final stages "remuages sur pupitre", "degorgement" and labelling.

ORGANOLEPTIC CHARACTERISTICS
Straw yellow colour with greenish reflections. Light and persistent perlage
Intense aroma with a dry taste, welf balanced with a good acidity.

TOTAL ACIDITY CONTENT 6 -6,5%
