PRODUCTION ZONE: This wine is produced from our vineyard situated on the hill LA SANTISSIMA in GUSSAGO (about 270 metres high). The production of grapes is 40 ql. per hectare.
VINE AND VINIFICATION: The Franciacorta D.O.C.G. Giovanni Biatta Brut stems from clonal selections of Chardonnay grapes. At harvest, the grapes are handpicket and placed into small boxes. Then, the whole grapes undergo a natural pressing (autopressurage). Fermentation occurs at controlled temperature (17 - 19 degrees) with indigenous yeast in order to maintain the flavours and the aromas of Franciacorta. After the fermentation, the wine matures in stainless steel tanks. In March and April the wine is bottled and the process to induce the sparkling takes place; Then the bottles are stored in rooms at controlled temperature (12 - 14 degrees) for at least 54 months.After that period, the Franciacorta D.O.C.G. Brut Giovanni Biatta presents its particular flavour and aroma, together with the finest perlage. The wine is then ready for the final stages: remuage, degorgement and labelling.
ORGANOLEPTIC CHARACTERISTICS: Floral, mineral, fruity and spicy mix. Patterned and elegant in mouth, with extraordinary long lasting taste.
