PRODUCTION ZONE: This wine is produced from our vineyard situated in Paderno Franciacorta and Gussago.
VINE AND VINIFICATION: The Franciacorta Brut D.O.C.G. stems from clonal selections of Pinot Noir grapes. At harvest, the grapes are handpicket and placed into small boxes. Then, the whole grapes undergo a very slow and soft pressing. Fermentation occurs at controlled temperature, without skins contact (17 - 19 degrees) with indigenous yeast in order to maintain the flavours and the aromas of Franciacorta. After the fermentation, the wine matures in stainless steel tanks. In March and April the wine is bottled, and the process to induce the sparkling takes place. Then the bottles are stored in rooms at controlled temperature (12 - 14 degrees) for at least 36 months. After that period, the Franciacorta Brut D.O.C.G. presents its particular flavour and aroma, together with the finest perlage. The wine is then ready for the final stages: remuage, degorgement and labelling.
ORGANOLEPTIC CHARACTERISTICS: Fine perlage. Mix of red fruit, raspberry and blackberry long lasting taste; mineral with chocolate flavour. Patterned and elegant in mouth. Pale pink with coppery highlights.
